7th November 2011—Thanksgiving 2011 at The Sunnyside! So popular the last 2 years, we are changing the menu a bit this year. One thing that will not change is our love affair with Brine-Curing the Turkey! Joe will share the tricks and take the mystery out of brining your bird. Learn to make:
- White Turnip, Leek and Bacon Chowder
- Roast Brine Cured Turkey with natural Gravy
- Baked Parsnip and Potato “Cake”
- Brioche, Roasted Pepper and Mushroom Stuffing
- Cranberry, Candied Ginger and Apple Crisp with Walnut Streusel
5th and 12th December 2011—Cocktail Party Food. By request here are some of our favorite canapés and hors d’oeuvres. As always we will share tips for advance preparation and such. Come have a Pomegranate Kir Royale and enjoy.
- Mini Crabcakes with Chive Crème Fraiche
- Caramelized Onion and Sage Crostini
- Mushrooms stuffed with Chourico and Escarole
- Tiny Chicken and Arugula Meatballs in spicy Tomato Fondue
- Goat Cheese Crostini with Beet Caviar and great Balsamic Vinegar
- Pimenton Crackers with Spicy White Bean Dip
- Baked Oysters with Spinach and Crispy Pancetta
9th January 2012—Pasta Boot Camp. This is Joe’s introduction to basic pasta sauces and how to cook pasta. Learn to make:
- Basic Tomato Sauce that can be transformed into several dishes
- Pesto and how Linguine al’ Pesto is traditionally served in Liguria
- Beef and Pork Bolognese
- Aglio-Olio—garlic and oil and a great demonstration of something being greater than the sum of its parts
- Amatriciana
- Carbonara, Spaghetti di Cecco and more.
- Learn delicious, authentic Italian recipes while Joe shares anecdotes of his travels about Italy.
23rd January 2012—Soup. You know, Campbell’s got it right when they coined “Soup is Good Food,” especially during the long cold winter. Here we present some of Joe’s and our guest’s favorites.
- Papa al Pomodoro—Tomato and Bread Soup pretty much our all time best seller.
- Joe will prepare a batch of Vegetable Stock and explain why he is increasingly making vegetarian/vegan soups.
- Vegan Mushroom and Potato Soup with Parsley Oil
- Home-style Chicken Noodle and Vegetable Soup
- Vegetarian Pasta and Bean Soup with Sage and Rosemary
- Our take on Clam Chowder—with bacon and a touch of cream
- Aquacotta—literally “cooked water” in Italian this is a hearty Tuscan vegetable soup served with a poached egg and grilled bread
6th February 2012—How do you say “I Love You?” Here is our off-beat homage to Valentine’s Day, from breakfast through dessert!
- Huevos Divorciados—yes eggs with “divorced sauces,” sitting on top of Chourico and Bean Hash. One of our most popular breakfast/brunch entrees.
- Salade Lyonnais with butter lettuce, creamy dressing, croutons and an oven fried egg with hot bacon
- Warm Crostino with wilted escarole and Spanish style Garlic Shrimp
- Tomato and Rosemary Risotto with long cooked pork and caramelized leeks
- Portuguese Bread Pudding with seasonal fruit, Mascarpone and Maple Syrup
13th February--Pasta Boot Camp second section! We will make the same recipes as on 9th January!
27th February 2012—Special Event with Noah Fulmer, Executive Director Farm Fresh Rhode Island! The Sunnyside is proud to welcome Noah for an informative and fun evening learning about the impact Farm Fresh is having on the local food scene and how the farm to table movement is shaping up in little Rhody. Joe will demonstrate that it is possible to eat well in the dead of winter using only locally sourced natural ingredients. We will highlight the importance of a fresh, local and sustainably raised food supply. A generous percentage of the ticket sales will be donated to Farm Fresh.
